Candied Walnuts

Ingredients:
1 1/2 cups walnuts
1/2 cup sugar
2T butter
1/2 t. vanilla

Directions:
1. Line a baking sheet with foil. Butter the foil; set baking sheet aside.
2. In a heavy skillet, combine the nuts, sugar, butter, and vanilla. Cook over medium-high heat, shaking skillet occasionally, until sugar begins to melt. Do not stir.
3. Reduce heat to low; continue cooking until sugar is golden brown, stirring occasionally. Remove skillet from heat. Pour the nut mixture onto the prepared baking sheet. Cool completely. Break into clusters.

Chicken and Walnut Salad with Honey Yogurt Dressing

Ingredients:
1 c cooked chicken
1/2 c low-fat yogurt
2 tsp honey
2 Tbs salsa
1/2 c cherry tomatoes
1 Tbs walnuts, chopped
2 c lettuce, torn or chopped
1 tsp olive oil
1 tsp balsamic vinegar

Instructions:
1. Dice the chicken and set aside.

2. In a small bowl, mix yogurt, honey and salsa. Add chicken and stir gently.

3. Cut the tomatoes in half and set aside. Put the lettuce in a medium bowl and sprinkle with the olive oil. Toss gently to coat the leaves with the oil. Sprinkle with the balsamic vinegar and toss again.

4. Top the lettuce with chicken and tomatoes and add the walnuts.

Strawberry Walnut Salad with Poppy Seed Vinaigrette Dressing

A beautiful simple salad with an amazing homemade vinaigrette dressing. Try this one out for Valentines Day or any special occasion!

Spinach
Spring Mixed Lettuce
Strawberries, sliced
Walnuts, crushed

Dressing:Vinegrette Dressing
1/4 c Apple Cider Vinegar
1/2 c Olive Oil
1 Tbs Demerara Sugar
1 Tbs Poppy Seeds
1 Tbs Sesame Seeds
1 Tbs Flax Seeds
2 tsp Dried Minced Onion
1/4 tsp Garlic Powder
1 Tbs Lemon Juice
1/4 tsp Worcestershire Sauce

Instructions:

The key to this salad is the dressing. To make it, find a shakable container (I used a canning jar) and put all the ingredients in it. Shake well before serving. Top spinach and mixed lettuce with strawberries and walnuts. Drizzle over the dressing and enjoy!

Chicken Salad Pockets

Ingredients:
4 c Chicken, cooked
1c Mayonnaise
1/4 tsp Garlic powder
1Tbs Dried minced onion
1/8 tsp Black pepper
1 c Celery
1/4 c Walnuts
1/4 c Pecans
4 Pita pockets (8 halves)

Instructions:
It is best to start with cold cooked chicken. dice the chicken into small pieces. Place the Chicken into a large bowl. In a smaller bowl, combine the mayonnaise, garlic powder, onion, and black pepper. Mix well.

Now put the mayonnaise mixture into the bowl with the chicken and mix well. Then stir in the celery and nuts. Congrats, you now have chicken salad. Take your chicken salad and stuff it onto your pita pockets. You can also serve this as a sandwich between two slices of bread but that’s pretty boring.
