Rotini and Sausage

Ingredients:Famous Pasta Sauce

2 Tbs Olive Oil
1 lb Italian Sausage Links
1 lb Rotini Pasta
1 batch Famous Pasta Sauce
Parmesan Cheese, to taste


Start up a batch of my famous pasta sauce. While that is cooking, get your sausages in a pan with olive oil and cook, turning often, until they reach 170°. While the sausages are cooking and the pasta sauce is cooking, don’t forget to stir the sauce, go ahead and cook up your pasta. When the sausage is done, transfer to a cutting board and slice into roughly 1/2″ pieces. When the pasta is done, drain and set aside. When your pasta sauce is done, it’s time to dish up. On a plate layer the pasta, sausage and pasta sauce. Then top with however much Parmesan cheese you like.

Red Beans and Rice

This is a great well known dish in the south. If you are not used to spicy foods, or you would like it a little less spicy, you can use a milder sausage (vs. Hot Link) and leave out the Cayenne Pepper.


1/4 c Olive Oil
3 Tbs Dried Minced Onion
1/4 tsp Dried Minced Garlic
2 Stalks Celery, sliced
1 lb. Hot Link Sausage, sliced
2 – 14 oz. cans Diced Tomato (with liquid)
2 c Rice, uncooked
2 Bay Leaves, crushed
1 Tbs Worcestershire Sauce
1 Tbs Parsley, dried
1 tsp Thyme, dried
1/2 tsp Sage, dried
1 tsp Cajun Seasoning
2 cans Kidney Beans, drained and rinsed
4 c Chicken Stock

Cajun Seasoning (makes 1 tsp)

1/8 tsp Paprika
1/8 tsp Cayenne Pepper
1/8 tsp Black Pepper
1/8 tsp Garlic Powder
1/8 tsp Chili Powder


In a large pot, saute the onion, garlic, and celery in hot oil until the onion is translucent. Add tomato and sausage, cook for a few minutes before adding in the rice and all the seasonings. Sir and cook a few more minutes to blend the spices throughout. Add kidney beans and chicken stock. Simmer until the rice is fully cooked, about 30 minutes.

Sausage and Egg Breakfast Casserole

Many mornings when I attend a MOPS group, someone brings a breakfast casserole. They are always a favorite of mine so here is my own version of a breakfast casserole. This serves 6-8.


1 lb Sausage, cooked & crubmled
5 Slices Bread, cubed
2 c Cheddar Cheese, shredded
10 eggs, beaten
2 c Milk
2 Tbs Dried Minced Onion
1/2 tsp Salt
1/4 tsp Pepper


Pre-heat oven to 325°. Line the bottom of a 9×13 pan with the bread. Top with sausage and cheese. Mix remaining ingredients in a bowl and pour over the top of everything. Bake for 1 hour.

Recipe: Louisiana Hot Link Soup

Louisiana Hot Link Soup

This is one of the easiest hearty soups I know. We took a family favorite and put a Louisiana spin on it by using hot links. Feel free to substitute in a milder sausage if you like.


1 lb Hot Links (pre-cooked)
4 c Chicken Stock
14 oz. can Diced Tomato
1/2 c Onion, diced
2 Garlic Cloves, minced
2 Medium Potatoes, cubed
2 Carrots, sliced
2 tsp Dried Basil
1 Tbs Dried Parsley
1 Tbs Demerara Sugar
2 Tbs Worcestershire Sauce
1 c Pasta
1/3 c Parmesan Cheese


Combine everything except pasta and Parmesan cheese in a large stock pot. Bring to a boil, then reduce to a simmer. Let simmer for around 2 hours. 30 minutes before your soup is done, toss in your pasta. Serve topped with Parmesan cheese.

Recipe: Papas Con Chorizo (Potatoes and Chorizo Sausage)

Papas Con Chorizo

Papas Con Chorizo (Potatoes and Chorizo Sausage)

This spicy sausage and potato dish works for dinner just as easily as for breakfast.


3 Tbs Vegetable Oil
4 c Sweet Potato, diced 1/4″
2 links Chorizo, casing removed
1/4 tsp Dried Minced Garlic (2 cloves)
1/4 c Cilantro, chopped


Dice sweet potatoes (or whites or reds) into 1/4″ cubes. Add them to boiling water and cook for 5 minutes. You want them to still be slightly tough. Train the potatoes very well and set aside. Season your chorizo with garlic and cook in vegetable oil in a high sided skillet until browned. Add potatoes and cook until the potatoes are browned and crispy a little on the outsides. Think of making hash-browns when you are determining the doneness of the potatoes. Dish up and top with chopped fresh cilantro.

Sausage n' Bacon Roll

Sausage n’ Bacon Roll

This was a recipe inspired by my husband. He envisioned a pub sausage wrapped in bacon and covered in a biscuit. I used Italian sausages, bacon, cheese, and my biscuit mix to create exactly what he wanted. So, try our sausage n’ bacon roll and let me know what you think of our new creation!


2 Tbs Vegetable Oil
4 Sausages
4 Slices of Bacon
2 1/4 c Bisquick
2/3 c Milk
1 c Cheddar Cheese, shredded


Preheat oven to 450°. Heat oil in a skillet over medium heat. Add sausages and brown on all sides. Cover the skillet and cook sausages for about 10 minutes. Meanwhile, mix Bisquick and milk in a bowl. Roll the dough out and create 4 squares that could cover the sausage (size depends on your sausages). Transfer squares to a baking sheet. Spread cheese over each dough square. Back to your sausage. Wrap each sausage in bacon and keep in place with toothpicks. Return the bacon wrapped sausage to the pan and cook until the bacon is well browned and crispy. Once they are ready, remove the toothpicks and place on a dough square. Roll the dough around the sausage and pinch the ends to completely surround the sausage, and bacon, with cheese and dough. Bake for 15 minutes or until golden brown. Serve with your choice of condiments. I picked ketchup and my husband had his homemade horseradish mustard.

Recipe: Sausage Cheese Soup

Sausage Cheese Soup


1 lb Sausage (ground or links)
2 c Carrot
2 Tbs Dried Minced Onion (1 small onion diced)
1/4 c Flour
1 3/4 c Chicken Stock (1-14oz. can)
1 1/2 c Milk
2 c Sharp Cheddar, shredded
2 c Provolone Cheese, shredded


If you are using sausage links, cook them first in large stockpot with some oil. Once they have cooked, dice them up and return them to the pot. If you are using ground sausage, lightly brown the sausage in a large stockpot with some oil.

Add carrot and onion to the sausage turning often. Cook until the carrot is tender. Add flour and toss to coat everything in flour. Cook about 1 minute. Add your chicken stock and milk, bring to a boil. Turn off the heat and add your cheese. Stir until the cheese is melted. Dish up and enjoy!
