Monte Cristo Sandwiches

Makes 2 sandwiches

Powdered-sugar-coated Monte Cristo sandwiches are traditionally made with slices of turkey, ham, and Swiss cheese with currant jelly to spoon over as they are eaten. A beautiful, special treat for brunch.

Ingredients:

4 slices bread
Mayonnaise
4 sandwich-size slices Swiss cheese, 1/8 inch thick
2 slices cooked ham, 1/8 to ¼ inch thick
2 slices cooked turkey, 1/8 to ¼ inch thick
1 egg, sightly beaten
2 Tbs. half-and-half (light cream) or milk
Dash salt
2-4 Tbs. butter or margarine
Powdered sugar
Parsley
Currant jelly

Directions:

Spread one side of each bread slice with a thin coating of mayonnaise. On two of the bread slices, place 2 slices cheese and 1 slice each ham and turkey; top with remaining bread slices, mayonnaise side down. Trim crusts and filling to make edges even, if you like. Cut each sandwich in half.
Beat egg with half-and-half and salt, then dip sandwiches into egg mixture. Melt butter in a wide frying pan over medium-high heat; add sandwiches and toast on both sides until cheese melts. Dust with powdered sugar, garnish with parsley, and serve hot with currant jelly to spoon over.

Pulled Pork Sandwiches

 

I realized that I hadn’t yet shared this delicious recipe for pulled pork sandwiches. It’s an easy crock pot dish and I’ve never met a man who didn’t love it! You can serve it with your favorite BBQ sauce as well as a side of beans and corn or coleslaw if you’d like. Perfect for potlucks, busy days, lazy days, or just a delicious summer meal.

 

Ingredients:

 

Marinade

 

1/2 c Apple Cider Vinegar
2 Tbs Dried Minced Onion
1 tsp Worcestershire sauce
3 lb. Pork Roast, boneless

 

Rub

 

1 Tbs Sugar
1 tsp Paprika
1/4 tsp Pepper
2 Tbs Ketchup

 

Buns (hamburger, sandwich, onion…)
BBQ Sauce, your favorite

 

Instructions:

 

Add the marinade ingredients to a ziploc bag and refrigerate it overnight if you can. Otherwise, dump it all in the crock pot. Mix the rub ingredients together and rub on top of the pork roast. Cook on low for 8 hours. Shred the pork with two forks and serve on buns with your favorite BBQ sauce and sides.

Turkey, sliced thin
Apple, sliced thin
Brie, sliced thin

Instructions:

Layer your tortilla with lettuce, turkey, apple slices, and brie. Wrap up and enjoy!

Bacon, cooked
Tomato
Provolone Cheese
Lettuce

Instructions:

Assemble and enjoy! Spread a light amount of mayo on each slice of bread. Top one slice of bread with turkey, bacon, tomato, cheese, lettuce and the other slice of bread.

Ingredients:

Cranberry Horseradish Glazed HamMustard
Vermont Cheddar
2 Slices Bread

Instructions:

Chop ham into small pieces. Take each slice of bread and spread a small amount of mustard on it. Then layer the ham and cheese on top. Take the open sandwich and place in a toaster oven or under a broiler until nicely browned and the cheese has melted. Carefully take the two halves of the sandwich and put them together. Now enjoy a great chopped ham sandwich! Side of pickle is optional.

Egg Salad Sandwich

Ingredients:

5 Hard-boiled eggs
1/2 c Mayonnaise
2 Tbs Dried Minced Onion
1/2 tsp Lemon Juice
1/4 tsp Mustard Powder
1/8 tsp Salt
1/8 tsp Garlic Powder
1/8 tsp Black Pepper
Lettuce
Mayonnaise
4 Slices Bread

Instructions:

Dice the hard-boiled eggs and place in a medium bowl. In a small bowl, mix the mayo, onion, lemon juice, mustard powder, salt, garlic, and pepper. Fold this mixture into the diced eggs and stir to incorporate. Spread a little mayo onto one side of each slice of bread. Top one slice of bread with lettuce and egg salad followed by the second slice of bread (mayo side in). Enjoy!

Recipe: Tuna Melts

Tuna Melts

Ingredients: (per sandwich)

2 Slices Bread
1 can Tuna
2 Tbs Mayonaise
1 oz. Cheddar Cheese
1 Tbs Butter

Instructions:

Butter one side of each slice of bread. Mix mayo with tuna in a small bowl. Heat griddle to 325. Place one slice of bread in the griddle, butter side down. Top with cheese and tuna mixture. Then add the other slice of bread, butter aside up. Cook on griddle until well browned and the cheese has melted, about 5 minutes per side. Enjoy!
