1/4 c Italian Dressing
1 lb. Turkey, 1/2″ pieces (cooked)
1 Onion, diced
2 Tomatoes, diced
8 oz. Tomato Sauce
4 oz. Cream Cheese, softened
1/2 tsp Red Pepper Flakes
2 c Pasta
Cook pasta according to directions on the box. Heat Italian dressing in a high sided skillet over medium heat. Add your onions and turkey. If your turkey is not pre-cooked, cook it for about 8 minutes. Otherwise, let it brown nicely. While it doing that, combine your tomato sauce and cream cheese. Blend them up to fully incorporate it and add it to your turkey with some diced tomatoes. Toss in your pepper flakes and stir well. When the pasta is done, drain well and mix with the turkey and tomato. Enjoy!

1 Tbs Olive Oil (or Peanut Oil)
2 oz. Panang Curry Paste
1 Tbs Palm Sugar
1 tsp Lime Juice
12 oz. Beef (California Tri-Tip, Pork Fillet, or Tenderloin)
1 can Coconut Milk
2 Tbs Ground Peanuts (plus more for garnish)
1 tsp Dried Basil
1/2 tsp Fish Sauce (to taste)
Red Pepper Flakes (to taste)
Slice beef incredibly thin and set aside. I use a serrated knife to do this. Heat oil in a high sided large skillet. Add curry paste, palm sugar, and lime juice. Stir and allow to reduce a little. Add beef and sear while mixing with the curry spice mix. Once beef is seared on all sides, add coconut milk, peanuts, and basil. Bring to a boil, then simmer for 20 minutes minimum. The longer it simmers, the better it tastes. While it is simmering, cook your jasmine rice according to the directions on the package. About 15 minutes before you dish up, add the fish sauce to the curry dish. To serve, put rice in a bowl, ladle beef and curry broth over rice. Top with additional peanuts and red pepper flakes.
This is also great as a chicken dish. Just swap beef out and replace with chicken.

I made this delicious pizza for dinner tonight. I make it all from scratch and it’s pretty easy. You can make so many varieties of this based on what you have on hand. This particular version included mozzarella slices, Parmesan cheese, Canadian bacon, salami, and sopressata.
1 1/4 C Whole Wheat Flour
1 1/4 All Purpose Flour (plus more for dusting and as needed)
2 1/4 tsp (1 package) Yeast
1/2 tsp Salt
1 C Warm Water
2 Tbs Olive Oil
Cornmeal (for dusting the baking sheet)
Red Pepper Flakes
Preheat oven to 425°
In a large bowl, combine the whole wheat flour, yeast, and salt. Stir to combine. Then add water and oil. Use a danish dough whisk to mix well. Add in all purpose flour and incorporate as much as possible.
Take dough and place on a floured surface. Knead the dough and add up to 1/2 C more flour if needed. Knead dough for at least 5 minutes until it is smooth and elastic. Divide dough in half. Cover the dough and let rest for 10 minutes.
While the dough is resting, prepare the sauce. In a medium sized bowl, mix together tomato sauce, oregano, basil, garlic, and red pepper flakes.
Once the dough has rested, roll out into two pizza crusts. Dust a baking sheet with cornmeal. Place pizza crusts onto baking sheet. Prick each crust all over with a fork. Bake for 10 minutes.
Take crusts out of the oven and add your sauce and toppings. Return to oven and bake for another 10 minutes.
