2 Tbs Olive Oil
2 c Penne pasta
1 lb. Ground Beef
1/2 c Onion, diced1 Tomato, diced
2 Cloves Garlic, 1/4 tsp dried minced
1/2 tsp Dried Basil
1/2 tsp Dried Oregano
1/4 tsp Red Pepper Flakes
1/8 tsp Black Pepper
15 oz. can Tomato Sauce
1/3 c Parmesan Cheese, shredded
Heat oil over medium heat in a high sided skillet. Brown beef with onion. Add tomato sauce, diced tomato, and spices. Reduce heat and simmer for 10 minutes while you cook the pasta. Once the pasta is cooked, drain and combine with the meat sauce. Stir to mix all the flavors together. Serve topped with parmesan cheese.

35 – 1″ Meatballs
4 c Penne Pasta
1/4 c Shredded Parmesan Cheese
1 c Shredded Mozzarella Cheese
Cook onion and garlic in oil. Add tomato sauce and diced tomatoes along with the basil and oregano. Stir and bring to a boil. Reduce heat and add meatballs and green beans. Simmer for 20 minutes. Meanwhile, cook pasta according do directions on box, drain and set aside. Once the sauce has simmered for 20 minutes, add in the pasta and Parmesan cheese, and toss to fill the pasta with sauce. Transfer to a 9×13 baking dish (3 qt. casserole). Top with mozzarella cheese and cover with foil. Bake at 400° for 20 min covered, then 5-10 min uncovered.

This recipe is a spin off of the traditional Mac ‘n Cheese we all know and love.

2 Tbs Dried Minced Onion (1/2 c chopped fresh)
2 Tbs Butter
2 Tbs Flour
1/8 tsp Pepper
2 c Milk
3 c Mozzarella, shredded (12 oz.)
Cook pasta according to directions on package. Drain and set aside. Meanwhile, cook the cheese sauce. Melt butter in a sauce pan. Saute the onion until translucent. Add flour and pepper, whisk to create a roux. Add in milk, whisking to keep lumps out. Once the milk is nice and hot, add in your mozzarella. When it’s all melted, add the pasta to the sauce pan. Mix to fill the pasta innards with cheese. Pour into a 2 qt. casserole dish and bake at 350° for around 30 minutes. Let stand for about 10 minutes before serving to let the cheese set up.
