Recipe: Ham and Cheese Baked Sandwiches


Ham and Cheese Baked Sandwiches


8 slices bread
1/2 lb. sliced ham
2 cups shredded sharp white Cheddar cheese
2 tablespoons butter, softened
1 1/2 c milk
4 eggs
1 tsp dried mustard
1 1/2 tsp dried chives (1 Tbs fresh)
1 tsp salt
1/2 tsp pepper


  1. Pre-heat oven to 400°. Grease a 9×13 glass pan.
  2. Place 4 slices of bread in the bottom of the pan. Cover bread with ham and most of the cheese. Butter remaining slices of bread and place on top of your “sandwiches” butter side up.
  3. In a medium bowl, mix milk, eggs, mustard, chives, salt, and pepper. Pour mixture over bread and top with remaining cheese. Let sit 15 minutes.
  4. Bake 30 – 35 minutes, or until egg is set and bread has browned.
  5. Enjoy!

Recipe: Split Pea Soup – Stock Pot

Split Pea Soup in a Stock Pot


4 C water
3 1/2 C Chicken Stock
2 1/4 C Dried Green Split Peas, rinsed (1 package)
1/4 tsp Pepper
1/4 tsp Dried Marjoram
1 Medium Ham Bone (or Diced Ham)
2 Tbs Dried Minced Onion (or 1 Medium Onion)
1-2 C Carrots, sliced
1-2 C Celery, sliced


Put everything except the carrots and celery in the stock pot and bring to a boil. Reduce heat and cover. Let simmer for 1 hour stirring occasionally. Take out the ham bone (if using) and remove the meat. Put the meat back in and stir in the carrots and celery. Cook for another 30 minutes. Great served up with saltine crackers.

4 C water
3 1/2 C Chicken Stock
2 1/4 C Dried Green Split Peas, rinsed (1 package)
1/4 tsp Pepper
1/4 tsp Dried Marjoram
1 Medium Ham Bone (or Diced Ham)
2 Tbs Dried Minced Onion (or 1 Medium Onion)
1-2 C Carrots, diced
1-2 C Celery, diced


Put everything in the crock pot and cook on LOW for 6-8 hours. Remove the Ham Bone (if using) and cut ham off the bone. Great served up with saltine crackers.

Recipe: Spicy Pasta with Asparagus and Ham


Spicy Pasta with Asparagus and Ham

I just came up with this recipe tonight and we loved it! The bit of crushed red pepper flakes gives a great kick and contrast to the asparagus.


2 C pasta
2 C asparagus
Olive Oil
3 C diced tomato
1 C diced ham
1 1/2 Tbs dried parsley flakes
1/8 tsp salt
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp crushed red pepper flakes
1/4 C parmesan cheese


  1. Cook pasta according to directions on box.
  2. Cut asparagus into nice 1 1/2-2″ lengths
  3. Dice tomatoes and ham
  4. Cook asparagus in olive oil until tender
  5. Toss in tomatoes and ham and heat through
  6. Stir in parsley, salt, oregano, basil, and red pepper flakes
  7. Add pasta (drained) and stir to combine
  8. Dish up and top with parmesan cheese
  9. Enjoy!

Recipe: Baked Monte Cristo Sandwich

Baked Monte Cristo Sandwich

2 cups Bisquick
3/4 cup milk
1 egg
5 oz Swiss cheese, thinly sliced
6 oz deli-style ham or turkey, very thinly sliced
6 oz deli-style turkey, very thinly sliced
1/3 cup jam


  1. Heat oven to 400ºF. Lightly grease spring form pan. In medium bowl, stir Bisquick, milk and egg until blended.
  2. Spread half of the dough in bottom of pan. Top with half each of the cheese, ham and turkey. Spread jam over turkey avoiding the very edges of the pan. Top with remaining ham, turkey and cheese. Spread remaining dough over cheese to sides of pan.
  3. Bake uncovered about 30 minutes or until golden brown. Let stand 5 minutes before serving.
    *Often times people dust this with powdered sugar but we don’t and it’s still tasty!

Recipe: Cheesy Ham and Potato Soup

Cheesy Ham and Potato Soup

Serves 8

3 1/2 cups potatoes, diced
1/3 cup celery, diced
1/3 cup onion, finely chopped (or 1 Tbs dried minced onion)
2 cups cooked ham, diced
3 1/4 cups chicken stock
salt (to taste)
1 teaspoon pepper
5 tablespoons butter
5 tablespoons flour
2 cups milk
2 cups cheddar cheese, shredded


  1. Combine potatoes, celery, onion, ham, and chicken stock in stockpot and bring to boil
  2. Cook over medium heat until potatoes are tender
  3. Add salt and pepper
  4. Make a roux in a small pan: melt butter and whisk in flour stirring constantly until thick
  5. Slowly stir in milk and keep stirring about 5 minutes or until its thick
  6. Add cheese to milk and stir until melted
  7. Stir cheese mixture into the stockpot and cook until heated through
  8. Use an immersion blender to reach desired consistency (if you want it to thicken it even more, add some potato flakes)
  9. Top with more cheese to look pretty
