Recipe: Crock Pot Thai Chicken

Crock Pot Thai Chicken

Serves 8

Ingredients:

4 Chicken Breasts
1 Tbs Grated Ginger
3 Green Onions, sliced
14 oz. Can Coconut Milk
1/2 tsp Tumeric
1/4 tsp Red Pepper Flakes
8 oz. Pineapple Chunks, drained
2 Tbs Cornstarch
2 Tbs Water
Rice, cooked (to serve with)
Chopped Peanuts (to top the dish)

Instructions:

Cut each breast in half. Place chicken in the bottom of a crock pot. Add ginger, green onion, coconut milk, turmeric, and pepper flakes. Cook on LOW for 4-5 hours. Turn the crock pot to HIGH. In a small bowl, mix cornstarch and water. Add pineapple and cornstarch mix to the crock pot and stir. Cook on High for 15 minutes. Serve over cooked rice and topped with peanuts.

Curried Chicken

Curried Chicken

This simple dish packs some wonderful warm flavor.

Ingredients:

2 Chicken Breasts
3 Tbs Butter
1 Tbs Red Curry Paste
1/4 tsp Ground Ginger
1/4 tsp Ground Cloves

Instructions:

Mix 2 Tbs softened butter with curry paste, ginger and cloves in a small bowl. Melt 1 Tbs butter in a skillet and place the chicken in. Spread the spice mixture on top of the chicken and cover. Let cook for 5 minutes. Flip the chicken and cook, covered, for another 5 minutes. Flip the chicken again and let it cook until it’s done. This largely depends on the thickness of your chicken so if in doubt, use a thermometer.

Recipe: Egg Flower Soup (Egg Drop Soup)

Egg Flower Soup

Ingredients:

3 Tbs Cornstarch
3 Tbs Water
3 c Chicken Stock
1 c Water
1 – 14 oz. Can Corn, drained
2 tsp Olive Oil
2 Tbs Soy Sauce
1 tsp Pepper
2 Tbs Dried Minced Onion
2 Tbs Butter
1 tsp Ground Ginger
3 Eggs
1/4 c Peas

Instructions:

In a small bowl, mix cornstarch and 3 Tbs water together and set aside. In a large pot, combine everything except the eggs, peas, and cornstarch mix. Bring to a rapid boil. Beat the eggs together in a small bowl. Then transfer then to a pourable container. Stir the soup rapidly to create a whirlpool and slowly drizzle the eggs into the boiling soup, very slowly. Once the eggs have “flowered” in the soup, add in the peas and cornstarch mix and stir. Once the peas have cooked to your liking, dish up and enjoy!
