Italian Sausage and Potato Skillet Dinner

Everyone loves a one dish dinner and especially one that can be ready quick! This takes less than 30 minutes for a delicious meat and potatoes comfort dish that serves 4.

Ingredients:

3 Tbs Olive Oil
1 lb Sausage
1/2 Onion (2 Tbs Dried Minced Onion)
1 lb Red Potatoes, cut into 1/2″ pieces
2 cloves Garlic
1 (14.5 oz) can Diced Tomatoes
1 1/2 tsp Rosemary
1 1/2 tsp Basil
1/2 tsp Pepper
1/4 tsp Salt

Instructions:

Heat oil in a high sided skillet. Brown sausage on all sides for about 5 minutes. Add potatoes, onion, salt and pepper. Cover and cook 10 minutes. Remove sausage and cut into 1/2″ pieces. Add the sausage back to the pan. Add the tomato and herbs. Stir to combine everything. Keep the dish moving until it’s heated through. Dish up and enjoy!

Recipe: Layered Dip

Layered Dip

I served this layered dip with tortilla chips at little man’s birthday party. Everyone loved it and we loved what little leftovers we had.

Ingredients:

Black beans
Salsa
Guacamole
Sour cream
Shredded cheddar cheese

Instructions:

Simple really, just layer on everything in order starting with the black beans and ending with the cheese. It’s great to make ahead and store in the fridge.

Recipe: Hard Boiled Eggs

Hard Boiled Eggs

I love hard boiled eggs. Unfortunately, I only think to make them around Easter. They really don’t take long and taste oh so good. Whip up a batch and I just might do the same throughout the year instead of only for this holiday.

Ingredients:

Eggs
Water

Instructions:

Place eggs in a pot covered with cool water that’s about 2″ deeper than the eggs. Bring water to a rapid boil. Set the timer for 12 minutes and remove the pot from heat. Once the timer has gone off, carefully remove the eggs from the hot water and place them in a cold water bath. Once they are fully cooled, refrigerate until you are ready to peel and eat them.

Baked Tortilla Chips

Tortillas
Olive Oil

Instructions:

Heat oven to 350°. Cut tortillas into wedges. For my 8″ tortillas, I’ve cut them into 8 wedges. Lightly brush or spray tortilla wedges with olive oil. Bake on a sheet pan 8-12 minutes or until lightly browned.

Old Fashion Irish Soda Bread

This is the easiest bread you will ever make!

Ingredients:

4 c Flour
1tsp Baking Soda
1tsp Salt
1 3/4 c Buttermilk

Instructions:

Preheat oven to 425. Mix dry ingredients in a large bowl. Dust a cutting board with flour. Add the buttermilk to the dry ingredients and mix until sticky. Place dough in a cast iron skillet (or round cake pan) and cut a cross in the top of the dough to allow for expansion. Bake for 45 minutes.

Chicken and Rice Bake

Chicken & Rice Bake

I grew up eating this dish and it always brings warm comfort. Yet it is super cheap, very healthy and easy to make. Serves 2-4.

Ingredients:

1 – 10 3/4 oz. can Cream of Mushroom Soup
1 1/3 c Water
3/4 c Rice, uncooked
1/4 tsp Paprika
1/4 tsp Pepper
4 Chicken Breast Halves (1 pound)

Instructions:

Mix everything but the chicken in a 9×13 baking dish. Top with chicken and sprinkle a little more paprika and pepper over the chicken. Bake, covered, at 375° for 45 minutes.
