Mashed Plantains

Little man loves Plantains and this is another one of Dad’s creations for him. He still likes the Plantain Pudding Dad made earlier for him too.

Ingredients:

3 Plantains
2Tbs Butter
1/2 tsp Cinnamon

Instructions:

Bring a pot of water to boil. Cut the ends of a very ripe (black) plantain. Slice the skin down the middle to remove. Slice each plantain into rounds and boil until fully cooked (20 minutes). Drain and rinse the plantain rounds. Return to pan and add butter and cinnamon. Mash the plantains with the butter and cinnamon. If the mixture is too thick, add water or milk until you’ve reached you’re desired consistency. It will solidify more as it cools.

Corned Beef Hash

Do you still have leftover corned beef? Do you want something other than a rubin sandwich? Then this recipe is for you!

Ingredients:

Butter
1 Onion, diced
Corned Beef, diced
Potatoes, pre-cooked, diced
Salt & Pepper

Instructions:

In a large high sided skillet, melt about 2-3 Tbs Butter. Saute the onion until translucent. Add potatoes and corned beef, toss to mix everything up then spread out evenly in the pan. Press down with the back of a spatula and let cook sizzle for 5-7 minutes. Turn over, toss, press down, and cook again. Continue this until the potatoes are nice and browned. If the potatoes are starting to stick, just add more butter. You could also use a non-stick pan and avoid the butter all together.

Recipe: Old Fashion Irish Soda Bread

Old Fashion Irish Soda Bread

This is the easiest bread you will ever make!

Ingredients:

4 c Flour
1tsp Baking Soda
1tsp Salt
1 3/4 c Buttermilk

Instructions:

Preheat oven to 425. Mix dry ingredients in a large bowl. Dust a cutting board with flour. Add the buttermilk to the dry ingredients and mix until sticky. Place dough in a cast iron skillet (or round cake pan) and cut a cross in the top of the dough to allow for expansion. Bake for 45 minutes.

Sausage and Egg Breakfast Casserole

Many mornings when I attend a MOPS group, someone brings a breakfast casserole. They are always a favorite of mine so here is my own version of a breakfast casserole. This serves 6-8.

Ingredients:

1 lb Sausage, cooked & crubmled
5 Slices Bread, cubed
2 c Cheddar Cheese, shredded
10 eggs, beaten
2 c Milk
2 Tbs Dried Minced Onion
1/2 tsp Salt
1/4 tsp Pepper

Instructions:

Pre-heat oven to 325°. Line the bottom of a 9×13 pan with the bread. Top with sausage and cheese. Mix remaining ingredients in a bowl and pour over the top of everything. Bake for 1 hour.

French Toast with Plumb Pear Sauce

Ingredients:

8 Slices Dry Bread

Batter:20130218_092757
4 Eggs
1 c Milk
1 tsp Demerara Sugar
2 tsp Vanilla
1/2 tsp Cinnamon
1/4 tsp Nutmeg20130218_093512

Topping:
4 Plumbs
1/2 Pear

Instructions:

Mix plumbs and pear in a blender. Then gently heat on the stove over low-medium heat. Let it simmer while you prepare the french toast. Preheat a griddle to 325-350°. In a large bowl, whisk together eggs, milk, sugar, vanilla, cinnamon and nutmeg. Dip the bread in the batter until fully saturated. If you are using very dry bread, 10 seconds will do. If the bread still has lots of give to it, then much less time. Place on the griddle and cook for 3 minutes on each side. Top with butter and plumb pear sauce.

Papas Con Chorizo (Potatoes and Chorizo Sausage)

This spicy sausage and potato dish works for dinner just as easily as for breakfast.

Ingredients:

3 Tbs Vegetable Oil
4 c Sweet Potato, diced 1/4″
2 links Chorizo, casing removed
1/4 tsp Dried Minced Garlic (2 cloves)
1/4 c Cilantro, chopped

Instructions:

Dice sweet potatoes (or whites or reds) into 1/4″ cubes. Add them to boiling water and cook for 5 minutes. You want them to still be slightly tough. Train the potatoes very well and set aside. Season your chorizo with garlic and cook in vegetable oil in a high sided skillet until browned. Add potatoes and cook until the potatoes are browned and crispy a little on the outsides. Think of making hash-browns when you are determining the doneness of the potatoes. Dish up and top with chopped fresh cilantro.

French Pancakes (Crepes)

Many years ago while I was in high school, we hosted a french exchange student. She made us this delicious breakfast that could moonlight as a dessert. It was Crepes! These very thin “pancakes” are surprisingly easy to make. Filled with fresh fruits, you can’t go wrong! Cook up a batch for breakfast and let me know how you like them!

Ingredients:

1 1/2 c Flour
1/2 tsp Salt
2 tsp Baking Powder
2 Tbs Demerara Sugar
4 Eggs
1 1/3 c Milk
2/3 c Water
1 tsp Vanilla

Fillings:
Butter
Sour Cream
Fruit (sliced banana, diced apple, blackberries, jam…)

Instructions:

Mix all your dry ingredients in a large bowl (flour, salt, baking powder, sugar). Mix all your wet ingredients in a medium bowl (eggs, milk, water, vanilla). Pour your wet ingredients into your dry ingredients and lightly mix. It’s ok if there are lumps. Ladle crepe mix onto a hot griddle making a large, thin pancake circle. When the edges look like they are completely set and starting to dry, flip them gently with a large spatula. You want a nice light golden brown color on the crepes. Cooking time will very, but for my griddle, it’s around 3 minutes per side. Fill the crepes with your desired fillings and gently roll up. Sprinkle a little sugar on top of the crepe and you’re done!
