Recipe: Sausage and Potato Cheese Casserole


Sausage and Potato Cheese Casserole

Another hearty dish perfect for a comfort meal night and makes good leftovers too!


3 cups potatoes, diced
1 lb sausage
Oil, for pan
4 Tbs butter
4 Tbs flour
2 c milk
1/2 tsp salt
1/4 tsp pepper
1/2 lb cheese, diced
1/2 c cheddar cheese, shredded
1/8 tsp paprika


  1. Heat oven to 350°
  2. Cook diced potato in boiling water until tender. Drain and place in a 2 qt. baking dish.
  3. Cook sausage in oil. Dice and put in dish with the potatoes. Mix them up a bit.
  4. Melt butter in a sauce pan. Add flour and whisk to create a rue.
  5. Add milk in small amounts. Keep whisking to make sure no lumps form. Do this until all the milk is added.
  6. Add the salt and pepper.
  7. Add diced cheese in batches and stir until everything is melted and incorporated. (I used provolone in the version pictured above but use what you have)
  8. Pour cheese sauce over potatoes and sausage.
  9. Top with shredded cheese and paprika (cheddar in the pictured version, again, use what you have)
  10. Bake for about 35 minutes. You want the shredded cheese to brown.
  11. Let sit so the cheese sauce can firm up a bit before serving.
  12. Enjoy!
